Default getting photos from Itunes to ipad2 to stay

I have a PC (XP) with iTunes installed and a new iPad2 that I want to transfer a lot of photos from various folders.
This operation works OK and generates an album in my iPad but as soon as I try to send (sync) another folder the first folder is erased from the iPad.
This is the most frustrating thing ever. How do I stop iTunes from doing this.

So now (after much fiddling about) I have been able to add photos (and keep to old ones) but they all end up in the same album and with the name of the last folder added. What I would like to know is how to operate iTunes without all this hassle.
Is there a free set of proper instructions that I can download?
Or is it possible to get a method to transfer my photos back and forth (PC / iPad2) without using this most illogical program?

works for me on my iPHONE, so would an iPAD be so different?

I haven't tried transferring my photos to my Ipad but I want to know also how to do this so that I can be able transfer my files from one files to another.

This is the most frustrating thing ever. How do I stop iTunes from doing this.

I'm using GoodSync to try to keep files to and from the iPad. Why Apple did not just make a folder and file hierarchy is beyond me.
