Default iTunes on a pre-owned retina macbook pro

I purchased a 3 month old macbook pro and the previous owner should have done a factory reset before handing it over but he missed a couple of things including his use of itunes.

When I picked the machine up, thinking that all was clear, I upgraded to Mountain Lion and upgraded iTunes to the latest version.

When I connect my iPhone, it opens iPhoto. How do I set the default to open iTunes when I connect it?

The previous owner also neglected to clear his music collection and still has his name in the Library. How can this be cleared, along with everything related to him?

Is there a swift 'format' to just the iTunes content?

Delete the iTunes folder in "Music" When you reopen itunes it will be as new (i.e.. blank and with no saved settings)

In iphoto - preferences-general allows you to tick/untick an "open iphoto when camera is attached" option
